This professionally oriented program offers students the opportunity to specialize in course work related to the hotel,
restaurant and nutrition industries, and culminates in the A.A.S. or A.S. degree. Students are prepared for professional and
middle management positions in various areas of the industry. Hotel students may anticipate employment positions in guest services, hotel front desk, housekeeping and auditors. Restaurant Management students may find employment as food and beverage managers, food service directors, and banquet and catering managers. An A.A.S. in Food and Nutrition prepares students for careers in Nutrition Education and Dietetics. Students are exposed to current culinary laboratory and food production methods. In addition, on-the-job training is provided through a cooperative work experience program conducted with local and national industry professionals. A full culinary laboratory features all the facilities necessary for students to prepare and serve meals. Computer labs are used to supplement the Hotel Front Office, Food and Beverage Operations II, and Food and Beverage Merchandising courses.The use of a Dietary Analysis Program prepares students for employment in health care facilities. A course of study is available for certification in Dietary Management and Food Service Technology. The department offers unique work-study and academic course opportunities in Europe and Walt Disney World. Students are required to work at special food and beverage functions offered to the College community as part of their course work.
The Food and Nutrition program is designed for students wishing to transfer to a four-year program in Nutrition with the goal of becoming a Registered Dietitian. The program provides the foundation courses, science courses and Food Service Management courses required by the American Dietetic Association for four-year programs in Dietetics, enabling students to transfer to these institutions with ease.
The Dietary Management, a one-year certificate program, is for those students desiring certification as a Dietary Manager. The program is fully accredited by the Dietary Managers Association and includes course offerings and a Registered Dietitian-supervised field experience. Graduates are eligible for membership in the Dietary Managers Association (DMA) and will be qualified to sit for the national credentialing exam to become a Certified Dietary Manager (CDM). Completion of this program will also earn students 31 credits towards an A.A.S. Degree in Food Service Management.
The department offers courses in the following subject areas: Hotel/Restaurant Technology (HTL) and Nutrition (NTR).
Students are required to do an internship in the hotel and restaurant management programs. One of the most popular options is working in Walt Disney World in Florida for a semester. Students earn six credits for the internship and live and work at Disney.
